Ingredients

  • 1 yellow onion, chopped
  • 1 bell pepper, diced
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried oregano
  • 1 tbsp. onion powder
  • 1 tbsp. sugar
  • 1 tbsp. tomato paste
  • 1 can of tomato sauce, 398 ml
  • 1/4 cup medium or hot Piri Piri sauce
  • 4 eggs
  • 1 avocado, sliced or cubed
  • Crumbled feta cheese
  • Cilantro or parsley
  • Slices of bread
  • Olive oil
  • Salt and pepper

Preparation

  1. Heat a drizzle of oil in a large pan over medium-high.
  2. Cook the onion, pepper and spices for 3-5 minutes. Season with salt and pepper.
  3. Add the tomato paste and cook for 1 minute.
  4. Add the tomato sauce and Piri Piri sauce, reduce the heat to medium-low and simmer 8-10 minutes until the sauce reduces and thickens.
  5. With a spoon, make small holes in the sauce and pour in the eggs. Cover and cook over medium-low heat for 6-8 minutes or until the egg whites are cooked.
  6. Garnish with sliced avocado, feta and herbs. Serve with toasted bread.
