Ingredients
- 1 yellow onion, chopped
- 1 bell pepper, diced
- 1 tbsp. smoked paprika
- 1 tbsp. dried oregano
- 1 tbsp. onion powder
- 1 tbsp. sugar
- 1 tbsp. tomato paste
- 1 can of tomato sauce, 398 ml
- 1/4 cup medium or hot Piri Piri sauce
- 4 eggs
- 1 avocado, sliced or cubed
- Crumbled feta cheese
- Cilantro or parsley
- Slices of bread
- Olive oil
- Salt and pepper
Preparation
- Heat a drizzle of oil in a large pan over medium-high.
- Cook the onion, pepper and spices for 3-5 minutes. Season with salt and pepper.
- Add the tomato paste and cook for 1 minute.
- Add the tomato sauce and Piri Piri sauce, reduce the heat to medium-low and simmer 8-10 minutes until the sauce reduces and thickens.
- With a spoon, make small holes in the sauce and pour in the eggs. Cover and cook over medium-low heat for 6-8 minutes or until the egg whites are cooked.
- Garnish with sliced avocado, feta and herbs. Serve with toasted bread.
