Ingredients
- 2 fresh salmon fillets, about 300 g
- 1/4 cup medium or hot Piri Piri sauce
- 1/4 cup soy sauce
- 1-2 tbsp. rice vinegar, to taste
- 3 tbsp. maple syrup
- 1 avocado, cubed
- 1 mango, cubed
- 1 Lebanese cucumber, thinly sliced
- 2 radishes, thinly sliced
- Branches of cilantro
- 2 tbsp. sesame seeds1/4 cup puffed quinoa or puffed rice
- Salt and pepper
- To serve: ramen noodles or jasmine rice
Preparation
- Cut the salmon into medium sized cubes.
- Put the Piri Piri sauce, soy sauce, rice vinegar and maple syrup in a bowl. Season to taste.
- Add the salmon cubes to the sauce and let marinate for a few minutes.
- Cook the noodles or rice according to package directions.
- Serve in a bowl and garnish with the salmon cubes, some of the marinade, the fruits, the vegetables, the sesame seeds, the puffed quinoa and the cilantro.
- Add an extra drizzle of Piri Piri sauce to taste.
