Salmon Poke Bowl

Ingredients

  • 2 fresh salmon fillets, about 300 g
  • 1/4 cup medium or hot Piri Piri sauce
  • 1/4 cup soy sauce
  • 1-2 tbsp. rice vinegar, to taste
  • 3 tbsp. maple syrup
  • 1 avocado, cubed
  • 1 mango, cubed
  • 1 Lebanese cucumber, thinly sliced
  • 2 radishes, thinly sliced
  • Branches of cilantro
  • 2 tbsp. sesame seeds1/4 cup puffed quinoa or puffed rice
  • Salt and pepper
  • To serve: ramen noodles or jasmine rice

Preparation

  1. Cut the salmon into medium sized cubes.
  2. Put the Piri Piri sauce, soy sauce, rice vinegar and maple syrup in a bowl. Season to taste.
  3. Add the salmon cubes to the sauce and let marinate for a few minutes.
  4. Cook the noodles or rice according to package directions.
  5. Serve in a bowl and garnish with the salmon cubes, some of the marinade, the fruits, the vegetables, the sesame seeds, the puffed quinoa and the cilantro.
  6. Add an extra drizzle of Piri Piri sauce to taste.
