Ingredients
- 280g ground pork
- 3 green onions, thinly sliced
- 2 10 inch tortillas
- 4 slices or 1 cup grated cheddar cheese
- 1/2 red onion, thinly sliced
- 1 tomato, cut into small cubes
- 2 avocados, roughly mashed
- 1/2 cup corn kernels
- 1 bunch cilantro, chopped
- 1 lime, zest and juice
- 1/2 cup sour cream
- 1/4 cup Casa Das Tias Piri Piri sauce (medium or hot)
Preparation
- Heat a drizzle of oil in a skillet over medium high heat.
- Cook the pork and the green onion for 4-5 minutes. Add salt and pepper.
- Add half of the Piri Piri sauce and cook 1 minute. Remove from the pan.
- Mix the tomatoes with the avocado, corn, cilantro, a drizzle of oil, lime juice, salt and pepper.
- Mix the sour cream with the remaining Piri Piri sauce, the lime zest, salt and pepper to taste.
- Garnish half of each tortillas with the pork mixture, the cheese and the red onion. Close the tortillas to form a half circle.
- Wipe the pan and add a drizzle of oil over medium high heat.
- Cook the tortillas in the pan 2 minutes on each side until colored and until the cheese is melting.
- Remove from the pan and slice the tortillas into triangles.
- Serve the tortillas with the sour cream and the guacamole.
