Ingredients
- 200g macaroni or short pasta of your choice
- 2 tbsp. butter
- 1 tbsp. flour
- Spice mix: 5 ml smoked paprika – 5 ml garlic powder – 5 ml onion powder – 5 ml dried oregano
- 1 cup milk
- 2 cups grated sharp cheddar
- 1/4 cup grated parmesan
- 1/2 cup medium or hot piri piri sauce
- 300g large prawns, peeled
- 2 cloves garlic, very finely chopped
- 3 tbsp. butter
- 8-10 sprigs of parsley, chopped
Preparation
- Preheat the oven to 450°F.
- Bring a pot of salted water to a boil. Cook the pasta for 9-12 minutes until tender. Reserve 1/4 cup cooking water then drain.
- Heat the butter in a large skillet over medium high heat.
- When the butter is foaming, add the flour and spices, mix and cook for 1 minute.
- Add the milk and bring to a boil. Reduce the heat to medium, add half the cheddar, all the Parmesan, Piri Piri sauce and pasta cooking water and simmer until the cheese is melted and incorporated into the sauce. Add the cooked pasta to the pan and mix well. Adjust seasoning to taste.
- Transfer the pasta to a baking dish and top with the remaining cheddar. Bake in the oven for 7-10 minutes until browned.
- Meanwhile, heat the butter in another skillet over medium heat.
- Add the prawns and cook 2-3 minutes on each side until pink.
- Add the garlic and parsley and cook for 1-2 minutes. Add salt and pepper to taste.
- Serve the macaroni and garnish with the shrimp. You can garnish everything with an extra Piri Piri sauce to taste.
