Ingredients
- 2 chicken legs with skin
- 1/4 cup plain yogurt
- 1/4 cup medium or hot piri piri sauce
- Spices: 3 ml dried oregano – 3 ml garlic powder – 3 ml onion powder – 3 ml smoked paprika
- 2 hamburger buns
- 1/2 red onion, thinly sliced
- 1/2 cup water
- 1/4 cup red wine vinegar
- 2 tbsp. white sugar
- 1 pinch of salt
- 4 leaves of Romaine lettuce
- 1/4 cup medium or hot piri piri sauce
- 1 large dill pickle, thinly sliced
Preparation
- Preheat the oven to 425°F.
- In a bowl, mix the yogurt with the Piri Piri sauce, spices, salt and pepper.
- Cover the chicken with this mixture and place on a baking sheet lined with baking paper.
- Bake in the oven for 28-34 minutes until browned and the center of the chicken is cooked.
- Meanwhile, put the onion in a bowl.
- Heat the water, vinegar, sugar and salt in a small saucepan over medium high heat.
- When the water is boiling, pour it over the onions. Let marinate.
- When the chicken is cooked, break it into pieces. Heat the loaves for 1-2 minutes in the oven if desired.
- Garnish with the lettuce, chicken, Piri Piri sauce, pickle slices and onions.
