Ingredients
- 1 cauliflower
- 3/4 cup of Piri Piri Casa Das Tias sauce, or more depending on the size of the cauliflower
- 1 avocado
- 1/3 cup plain yogurt
- 3 tbs mayonnaise
- 1 lemon
- 1 tbs onion powder
- 1 bunch dill
- 1 head of Boston lettuce
- 1/3 cup cashews
- 1 tsp turmeric
- 1/2 tsp Espelette pepper
- 1 radish, thinly sliced
Preparation
- Boil the whole cauliflower in a large pot of water for 10-15 minutes, depending on size.
- Drain gently.
- Preheat the oven to 400°F.
- Add some oil to the bottom of a pot and put the cauliflower in. You can also use parchment paper.
- Put the piri piri sauce over the cauliflower.
- Roast in the oven for 20-30 minutes, depending on the size.
- Meanwhile, mix the avocado with the yogurt, mayonnaise, lemon juice, onion powder, dill, salt and pepper.
- Add a little water for a more liquid sauce.
- Put the nuts in a small pan with a drizzle of olive oil, the turmeric and Espelette pepper.
- Roast over high heat for 2-3 minutes until coloured. Transfer on a paper towel.
- When the cauliflower is cooked, place on the lettuce and garnish with the ranch sauce, radish and nuts.
