Piri piri cauliflower

Ingredients

  • 1 cauliflower
  • 3/4 cup of Piri Piri Casa Das Tias sauce, or more depending on the size of the cauliflower
  • 1 avocado
  • 1/3 cup plain yogurt
  • 3 tbs mayonnaise
  • 1 lemon
  • 1 tbs onion powder
  • 1 bunch dill
  • 1 head of Boston lettuce
  • 1/3 cup cashews
  • 1 tsp turmeric
  • 1/2 tsp Espelette pepper
  • 1 radish, thinly sliced

Preparation

  1. Boil the whole cauliflower in a large pot of water for 10-15 minutes, depending on size.
  2. Drain gently.
  3. Preheat the oven to 400°F.
  4. Add some oil to the bottom of a pot and put the cauliflower in. You can also use parchment paper.
  5. Put the piri piri sauce over the cauliflower.
  6. Roast in the oven for 20-30 minutes, depending on the size.
  7. Meanwhile, mix the avocado with the yogurt, mayonnaise, lemon juice, onion powder, dill, salt and pepper.
  8. Add a little water for a more liquid sauce.
  9. Put the nuts in a small pan with a drizzle of olive oil, the turmeric and Espelette pepper.
  10. Roast over high heat for 2-3 minutes until coloured. Transfer on a paper towel.
  11. When the cauliflower is cooked, place on the lettuce and garnish with the ranch sauce, radish and nuts.
