ITALIAN MEATBALL SOUP

with pasta and piri piri sauce

Ingredients

  • 300g ground pork 
  • 2-3 tbsp. Piri Piri sauce, medium or hot
  • 1 carrot
  • 1 celery
  • 1 bell pepper
  • 1/2 onion
  • 2 tbsp. Italian spices or spaghetti spices 
  • 1 can cherry or diced tomatoes (398ml)
  • 1 tbsp. sugar
  • 1 cup short pasta
  • 4 cups vegetable or chicken broth
  • 1/4 cup Piri Piri sauce, medium or hot
  • 2-3 tbsp. grated parmesan
  • Parsley or basil leaves

Preparation

  1. Preheat the oven to 375°F.
  2. Mix the ground meat with the Piri Piri sauce, salt and pepper.
  3. Make small to medium balls and place on a baking sheet lined with baking paper. Bake in the oven for 15 minutes.
  4. Heat a drizzle of oil in a large pot over medium-high heat.
  5. Cook the carrot, celery, pepper, onion and spices for 3-4 minutes. Season with salt and pepper.
  6. Add the canned tomatoes, sugar, pasta, broth and Piri Piri sauce to the pot. Bring the soup to a boil.
  7. Half cover the pot and simmer over medium heat for 15 minutes, stirring a few times, until the pasta is tender.
  8. Add the meatballs to the soup.
  9. Serve and garnish with parmesan and your favorite herb to taste.
