Ingredients
- 300g ground pork
- 2-3 tbsp. Piri Piri sauce, medium or hot
- 1 carrot
- 1 celery
- 1 bell pepper
- 1/2 onion
- 2 tbsp. Italian spices or spaghetti spices
- 1 can cherry or diced tomatoes (398ml)
- 1 tbsp. sugar
- 1 cup short pasta
- 4 cups vegetable or chicken broth
- 1/4 cup Piri Piri sauce, medium or hot
- 2-3 tbsp. grated parmesan
- Parsley or basil leaves
Preparation
- Preheat the oven to 375°F.
- Mix the ground meat with the Piri Piri sauce, salt and pepper.
- Make small to medium balls and place on a baking sheet lined with baking paper. Bake in the oven for 15 minutes.
- Heat a drizzle of oil in a large pot over medium-high heat.
- Cook the carrot, celery, pepper, onion and spices for 3-4 minutes. Season with salt and pepper.
- Add the canned tomatoes, sugar, pasta, broth and Piri Piri sauce to the pot. Bring the soup to a boil.
- Half cover the pot and simmer over medium heat for 15 minutes, stirring a few times, until the pasta is tender.
- Add the meatballs to the soup.
- Serve and garnish with parmesan and your favorite herb to taste.
